This 13cm boning knife is designed by Giesser in Winnenden. These knives are specifically designed for the needs of professional butchers.
The blade is made of stainless steel enriched with chromium and molybdenum, making it highly resistant to corrosion. Thanks to mirror polishing, the blade surface is perfectly smooth. This technique prevents rust from becoming embedded, and the blade is also easier to wash. The blade is vacuum-hardened using an ultra-modern process, which considerably improves cutting performance.
The blade is ideally suited to life in the professional kitchen: it is shock-resistant, corrosion-resistant and easy to sharpen. With a hardness of 56 HRC, you can easily sharpen the blade with a sharpening gun on a daily basis.
Several sharpening stages are necessary to obtain the final edge: a hyper-precise grinding wheel sharpens the edge, then each blade is entrusted to a master sharpener who finishes the sharpening by hand.
The handle is made of non-slip synthetic material, a style of hard rubber that makes intensive use less demanding. The developed guard will secure your fingers for safe use!
