The Deba Kai Seki Magoroku Hejiku 15cm knife is ideal for cutting fish and fish carcasses, thanks to its thick blade. It can also be used to make meat or fish tartars.
The Kai Hejiku series is specially designed for left-handed cooks, a plus since left-handed cooks are often forgotten in the kitchen! This knife features a one-sided cutting edge, based on the cutting angle used by left-handed cooks, to enable them to cut easily and pleasantly, without having to adapt to the more numerous right-handed models.
The blade is made from 1K6 stainless steel, a tough alloy enriched with molybdenum and vanadium and 0.8% carbon, which achieves a hardness of 58 HRC on the Rockwell scale. This is a very good ratio between edge retention and ease of sharpening.
Last but not least, its mirror-polished finish adds a touch of elegance.
The handle is made of PP (polypropylene, a tough material often found in the kitchen, particularly inUtensils design). It has good mechanical and thermal resistance, to guarantee pleasant use. It's very light, so easy to use over time, and its original 4-sided shape fits perfectly into your palm (the top is rounded, while the bottom has ridges).
We recommend hand-washing, as it's gentler on the knife.
