Discover the world of high-end cutlery with the Japanese Kai Shun Kagerou chef's knife. This 20cm knife combines luxurious design, exceptional performance and meticulously thought-out ergonomics. Winner of the prestigious Red Dot Award 2025, the Shun Kagerou range is a perfect illustration of Japanese excellence in knife-making.
The Shun Kagerou chef's knife is the ultimate all-rounder. It is designed to mince, chop or slice with incomparable ease. From meat to vegetables and herbs, it's a must-have for chefs and lovers of fine cuisine alike. Its long, well-balanced blade guarantees smooth, precise and effortless cutting.
A high-end Dual Core blade design
The 20cm blade is made from Dual Core, a unique design that combines two high-grade stainless steels: VG2, renowned for its flexibility and strength, and VG10, famous for its hardness and ability to maintain an exceptional cutting edge. This combination of steels achieves a hardness of around 61 HRC, guaranteeing both cutting finesse and durability. Thanks to Composite Blade Technology, the blade retains its remarkable cutting performance, even after intensive use.
The visual aspect of the blade is enhanced by a 71-layer damascus finish, due to the two steels used. Its patterns evoke the heat currents rising above the flames. The upper part of the blade has a superb mirror finish, which contrasts elegantly with the damascened lower part. A delicate copper border aesthetically separates the two parts. Finally, the Shun logo is embossed on the blade to underline the knife's luxurious character.
A handle with ideal ergonomics
Measuring 12.5cm, the knife's handle is made from mottled grey pakka wood, a robust composite material that resists moisture. Its symmetrical U-shape, exclusive to the Shun Kagerou series, offers an ergonomic and secure grip for both right- and left-handed users. This shape guarantees long-lasting comfort and perfect control.
The stainless steel bolster and forged stainless steel base reinforce the balance between blade and handle, offering precise control and enhanced safety. This chef's knife combines refinement, power and efficiency in every detail.

Caring for my knife by hand
To preserve the quality and aesthetics of your Kai Japanese chef's knife, it is important to clean it only by hand, using a soft sponge and neutral soap. Wipe immediately after washing with a dry cloth, then store in a dry place. It is not dishwasher-safe, and prolonged soaking is not recommended to preserve the beauty of its damascened blade and the quality of its pakka wood handle.
