A Japanese whetstone for optimum maintenance

This Kai Seki Magoroku whetstone is perfect for maintaining your kitchen knives! Its 2000 grit is ideal for regular use, as it is not too abrasive. You can use it to restore the sharpness of your Japanese knives or keep them sharp! This whetstone doesn't remove too much material, so your knives will last longer.

It can be used on both Western and Japanese knives, and on medium and high HRC. How often you use your stone depends on how you use your knives. When you feel that your knife is losing its edge, use this 2000-grit stone to maintain its sharpness. If you wait too long, use a more abrasive stone to enhance the cutting edge.

This Kai stone comes with a black synthetic base for safe use. It can also be used as a tray to avoid soiling your worktop. Finally, you can close this base with the lid to store your stone safely.

How to use a whetstone

To use your whetstone, immerse it in water for around 15 minutes. Then tilt the top half of the blade at a 45° angle to the stone. Apply light pressure with your forefinger and middle finger on the end of the blade, then tilt it 10° to 15° (to help you, make sure there's about the thickness of a coin between the back of the blade and the stone).

During sharpening, you'll notice the appearance of black filings: this is what sharpens your knives. As soon as the filings start to solidify, add water and continue sharpening the rest of the blade (you can wipe the blade with a soft cloth between operations). To check if the knife is properly sharpened, we recommend you perform the paper test, which will instantly reveal the effectiveness of the sharpening.
