Description

A practical Kai whetstone

This Kai Seki Magoroku stone is perfect for maintaining your kitchen knives! This double-sided whetstone is versatile for sharpening your blades to a razor-sharp finish.

It can be used on both Japanese and Western knives, especially those with a high HRC hardness. Indeed, knives with too low a hardness would not benefit from sharpening with a medium/fine-grained stone. How often you use the stone depends on how often you use your knives.

It has a medium-grain #1000 face for regular maintenance of your blades when they start to lose their sharpness. Thanks to this face, you can regain the edge of your knives without removing too much material, as it is not too abrasive.

Next, the #4000 fine-grain face is ideal for knives over 60HRC Rockwell, as it gives them a long-lasting edge. This face is ideal for bringing a pronounced polish to blades of this hardness. With further sharpening, you can give your kitchen knives a razor-sharp finish!

This Kai whetstone comes with a black synthetic base for safe use. This base can also be used as a water catchment tray to avoid dirtying your worktop. Once you've finished sharpening, you can close it with its lid to safely store your whetstone.

How do I sharpen with a whetstone?

To begin with, soak your stone in water for about fifteen minutes before use. Then place the top half of the blade at a 45° angle to the stone. Apply light pressure with your index and middle fingers on the end of the blade and tilt it 10° to 15°. As a guide, imagine that there is about the thickness of a coin between the back of the blade and the stone.

As you use it, you'll notice the appearance of sharpening sludge: this is what sharpens your knives. When it begins to solidify, add water and continue sharpening the rest of the blade (you can wipe the blade with a cloth between each step). To check if the blade is properly sharpened, perform the paper test, which will reveal the effectiveness of your sharpening!
