Description

An unusual handcrafted Japanese sujihiki

Discover a blade inspired by Japanese tradition, where performance and aesthetics meet! The Masagake Kiri 27 cm sujihiki knife combines the finesse of a long-cutting knife with the elegance of an authentic Japanese forge. Hand-forged in Takefu, in the heart of Japan's legendary Cutlery Village, this knife is an exceptional piece of craftsmanship designed for connoisseurs of meticulous cutting!

High-quality blade for this damascus knife

The blade of this 27 cm sujihiki is designed for long, clean and even cuts. It features a core of VG10 steel, a Japanese alloy highly prized in high-end cutlery. Its high carbon content of around 1%, combined with elements such as vanadium and cobalt, gives it excellent cutting capacity while remaining tough.

This hard core is wrapped in 48 layers of damascened stainless steels, alternating to create both protection and refined aesthetics. The damask pattern is uniquely revealed in each Masakage knife, depending on the layers revealed during polishing.

The heat treatment applied during forging achieves a hardness of 60HRC Rockwell, an ideal compromise for a blade that stays sharp for a long time yet is easy to maintain.

Thanks to its slender profile, this sujihiki knife glides fluidly through food, reducing resistance to cutting and preventing tearing: ideal for lifting a fish fillet, slicing a roast or preparing sashimi!

The Japanese kitchen knife with an elegant handle

The handle of your Damascus knife is made from Japanese magnolia wood, selected for its lightness and resistance to humidity.

Its oval shape, traditional in Japanese cutlery, offers excellent ergonomics, providing a stable, comfortable grip whatever the size of the hand. This ambidextrous shape is equally suitable for right- and left-handed users.

The bolster is made from red pakkawood, a high-density pressed composite wood that is both aesthetically pleasing and durable. This transition between blade and handle adds a distinctive visual element, while contributing to the solidity of the whole. The light wood of the magnolia and the red hues of the bolster form an elegant contrast, in perfect harmony with the damascus of the blade.

Maintain your Japanese sujihiki with care to preserve its sharpness and beauty. Only wash by hand immediately after use with a soft sponge and dry thoroughly. Avoid the dishwasher to avoid damaging the steel or wood, and don't leave it to soak in the sink. Sharpen your blade regularly with a suitable stone to maintain a clean cut every time you use it.

The craftsman behind the blade: Yoshimi Kato, traditional Japanese know-how

This handcrafted Japanese knife is forged by Yoshimi Kato, a master blacksmith based at Takefu Knife Village, the Mecca of Japanese cutlery. Yoshimi learned his art from his father-in-law Hiroshi Kato, heir to a long tradition, and has added his own touch by creating blades with a distinctive design, while respecting the ancestral forging method. In this cutlery village, craftsmen and apprentices share traditional techniques, enabling each Japanese knife to tell a unique story.
