A few words about the manufacturer:
Suehiro is a Jaopnese specialist in professional sharpening. Its stones are durable and pleasant to use.
To offer you quality products, the manufacturer takes care of every stage in the manufacture of its stones, from research and development to production.
Here are the important phases in the creation of whetstones:
- Mixing and stirring ingredients in large vats
- Press each stone into a rectangular shape
- Allow shaped stones to dry for a short time
- Bake to set
- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
- Quality control before the stones are placed in the packaging
The stone:
This Cerax stone has two faces with different grit:
-Blue face #1000: this grit is considered medium, so this face is recommended for regular maintenance of the cutting edge, so that it doesn't dull too much.
-Light yellow face #3000: this grit is considered fine, and is therefore recommended for polishing the edge of your blades.
Note that the two stone faces are bonded together by a black base, making them easy to handle.
Thanks to its double grit, this stone gives your kitchen knives a more polished finish. Note that the Cerax series is composed of stones fired at very high temperatures, making them more resistant to the risk of chipping. They are also pleasant to use.
To know how to use the stone:
This stone works with water, so you need to immerse it for 5 minutes. You can reapply water during sharpening, when you feel it's necessary.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it off during the process.
When you've finished, you can rinse the surface and clean it with a small, soft brush. Wipe it with a dry cloth, then leave it to dry in a room at room temperature (keep it out of the sun to dry faster).
Additional accessories :
A small white Nagura stone is supplied with the main stone. It is used to create the famous slurry that facilitates the stone's abrasive action.
A transparent box allows you to store it, but it can also be used as a sharpening stand when in use, or as a small basin for soaking the face you want. The box also has a space for the Nagura stone. Its black feet are removable.
Additional information: the dimensions of the stone may vary by a few millimetres, and its weight by a few grams - this is perfectly normal.
