Masutani knives are handcrafted on Japan's Echizen coast. They embody quality craftsmanship handed down from generations of Japanese artisans who forged the legendary samurai swords. Japan, rich in cutlery traditions, offers top-quality Japanese knives to equip you in the kitchen - an investment that quickly pays for itself.
Masutani makes its Japanese kitchen knives in a workshop alongside its small team. Each knife is handcrafted, then presented in attractive boxes, ideal as a gift for a cooking enthusiast or chef.
A Japanese nakiri knife with an elegant blade
This nakiri knife features a damascened blade, a technique that consists of forging a rigid steel core that is covered by several layers of softer steel. This method balances the flexibility of the blade, while protecting the core at its center.
For this blade, the core is made of Japanese VG10 steel, an alloy produced by the renowned Takefu Special Steel. It contains around 1% carbon, which increases the alloy's hardness. As a result, this blade has a hardness of 60HRC on the Rockwell scale, offering excellent edge retention and cutting performance.
For greater efficiency, the cutting edge of this handcrafted Japanese knife has been honed by hand, using several sharpening stones. In fact, when sharpening becomes necessary, your damask knife remains relatively easy to sharpen with a stone.
The damascus structure is complemented by several layers of softer steel, providing protection but also suppleness at the heart of your blade. As well as being practical, damascus is also a real visual advantage! You can see the superimposition of the different layers all over the surface of the blade. The damask created is original and adds character to your Japanese knife.
This handcrafted knife features an elegant nashiji finish. Kanjis are engraved on the blade for an extra touch of authenticity.
A handle that's both ergonomic and solid
The handle of your handcrafted Japanese knife is made of durable black pakka wood. This composite material is made from resin and laminated wood, all heat-hardened to offer great strength, yet with the appearance of natural wood thanks to the veining that emerges.
This Western-shaped handle can be used by right- and left-handed users alike! It offers an ergonomic grip for controlled handling, ideal for long-term use.
Finally, the handle is completed by a stainless steel bolster and 2 rivets, also in stainless steel, which securely fix the full tang blade. So you've got a reliable kitchen knife that lasts!
To care for your damask knife, wash only by hand with a non-abrasive sponge and mild detergent. Once washed, wipe dry immediately and store in a dry place with no traces of moisture. Do not put in the dishwasher, or leave to soak in the sink.
