Michel Bras is a renowned chef whose restaurant boasts three Michelin stars, and whose creative cuisine is even exported to Japan, in a restaurant on the island of Hokkaido. The collaboration between Chef Bras and Japanese manufacturer Kai was a natural one: the aim was to develop reliable, high-performance Utensils.
The Michel Bras Quotidien knife range comprises 3 knives which, as their name suggests, are ideal for regular, everyday use.
This Quotidien n°1 (S)paring knife features a blade made from AUS-8A stainless steel, with a chromium content of around 14.5% (perfect for resistance to oxidation) and a carbon content of around 0.8% (for blade hardness). In the end, its hardness reaches 58/59 HRC on the Rockwell scale, a good compromise between edge retention and ease of resharpening. This confirms that it's perfect for everyday use.
The steel then benefits from a titanium coating, which not only protects it, but also enhances its non-stick properties. The dark appearance of titanium adds originality to the piece.
For an impeccable finish, you can distinguish the brand name that has been affixed to the cutting surface, as well as the words "Made in Japan", a guarantee of quality. The name of the Michelin-starred chef also appears on the blade as a signature. Also visible on the back of the blade is a cistre leaf (a plant growing on the Aubrac plateaus), the elegant emblem of the chef's cuisine.
The handle is made of Pakkawood, a composite material much appreciated in culinary circles for its longevity and robustness. It is made from laminated wood and resin, all hot-pressed together. The result resembles natural wood in its fine grain. Pakkawood is not only antibacterial, but also resistant to changes in temperature and humidity (it is said to be rot-proof).
The handle is completed by 2 rivets that hold the various parts of the knife together.
Care instructions :
The knife should be hand-washed, wiped dry and stored in a dry place. Do not use the dishwasher.
