Description

Cut large pieces of meat with the Kai Michel Bras 22.5cm meat knife!

Chef Michel Bras is famous for his "creative" cuisine at his three-starred restaurant in Laguiole, and his popularity extends as far as Japan, where he also runs a prestigious restaurant. The collaboration between Kai and Michel Bras was therefore a natural step, with the aim of offering high-performance, durable and aesthetically pleasing knives and Utensils for both professional and private customers.

Kai Michel Bras knives represent a balance between aesthetics, efficiency and durability. The chef wanted knives just the way he likes them: easy to sharpen, balanced and made from beautiful materials. Michel Bras uses knives that are neither too light nor too heavy, and that are ergonomically designed to be so easy to handle that you forget about them until they become an extension of your hand. So you opt for the expertise of a great name in the culinary arts, coupled with the exceptional quality of Kai's world-renowned Japanese knives.

This meat knife enables you to cut large pieces of raw or cooked red meat, poultry, leg of lamb, toast... It cuts cleanly through the fibers of the meat. This optimizes meat cooking, prevents excess juices from running off and enhances flavor.

The knife's VG10 steel blade is considered one of the best in the world, thanks to its resistance to corrosion and its ability to provide a long-lasting sharp edge. Although it is a stainless steel, this does not prevent it from giving knives a razor-sharp edge, thanks to its high carbon content. Here's the complete composition of VG10 steel: carbon for a high-quality cutting edge, chromium for corrosion resistance (over 13%), molybdenum to increase the blade's hardness and resistance to shock and corrosion. Finally, vanadium and manganese provide additional resistance to wear and abrasion.

The 8cm blade has a Rockwell hardness rating of 63 HRC for an effective cutting edge that remains so despite repeated use. This is due to an appropriate assembly of 3 steel layers. Nevertheless, you can restore its effectiveness by maintaining it with a Sharpening stone if necessary. Be careful, however, not to use the knife on very hard foods such as bones, to avoid weakening the blade.

The blade has a titanium coating that protects the steel and makes it non-stick for optimal cutting.

As a finishing touch, you can distinguish the brand name that has been affixed to the cutting surface, as well as the words "Made in Japan", a guarantee of quality. The logo representing the cistre leaf (a plant growing on the Aubrac plateaus) adds a touch of elegance and authenticity, and is the emblem of the seasoned chef's cuisine.

Turning now to the handle, it is made from composite wood for unfailing strength and easy maintenance. It is neither too light nor too heavy to maximize comfort of use for better cutting.

Michel Bras chose a "chestnut" shape, taken from Japanese tradition, to create an ergonomic handle that fits the shape of your hand without tiring it, despite repeated use.

The stainless steel Bolster and base further strengthen the handle. The base is engraved with the name of the Michelin-starred chef.

The piece comes with a wooden scabbard, the designer's intention being to present it in a beautiful case, once again in the manner of a piece of jewelry. A sharpening guide is also included to help you sharpen the piece if necessary.

How to care for your knife :

Wash the knife by hand (never put it in the dishwasher) and wipe with a dry cloth immediately after cleaning. Finally, you can store it carefully on your magnet bar, in a block or in a drawer after putting it in its sheath.
