The tapered blade
The blade is made of Sandvik 12C27 stainless steel, renowned for its strength and ease of maintenance. It has a high carbon content (around 0.4%), for greater strength: the blade's edge is all the finer and sharper.
It then undergoes a special 2-stage heat treatment:
- Tempering: the blade is heated to over 800°C and then rapidly cooled down.
- Tempering: the blade is heated again and then cooled very slowly.
Then the cutting edge: an Opinel is sharpened at an angle of around 40°C for a well-balanced, efficient edge. Note that this operation is carried out by hand.
Here, the blade is totally tapered: it is much finer than traditional blades. Cutting is all the more precise, so you can tackle the lifting of fish fillets effortlessly.
The handle
The handle is made from padouk, also known as sandalwood, a wood from tropical and equatorial Africa. Its red hue lends a certain elegance to the knife. Note that the handle is varnished, for better protection against marks and humidity.
The rotating ferrule
The rotating ferrule is a very important element: it forms the junction between the blade and the handle. It locks the blade in place when folded or unfolded, ensuring safe use.
