This Samura kitchen knife is designed in China by a team of cutlery experts! In fact, one province in southern China has been famous for knife-making for 1500 years.

This 18cmsantoku knife is a multi-purpose knife, the equivalent of a chef's knife, but with a Japanese shape. Its slightly curved blade creates a natural rocking motion when cutting, making it easy to use. It's a favorite for chopping herbs, for example.

Blade :

Made of AUS-8 stainless steel, with 0.8% carbon and 14.5% chromium. The former has an impact on the rigidity of the cutting surface, while the latter is essential for oxidation resistance. The result is a high-performance alloy that's easy to maintain.

The blade hardness is 59/60 HRC. This is a good index, showing that the knife will keep its cutting edge longer than a knife with less carbon, and that it is still easy to maintain when you feel it starting to lose its effectiveness.

The knife's cutting edge is beveled, with symmetrical sharpening. The edge is hand-finished on a 5000 grit stone. You'll feel its effectiveness the first time you use it.

Handle:

The handle is made of micarta, a tough, durable composite material. Made of 40% resin and 60% linen, it is tough and resistant to temperature variations: it can withstand heat of up to 150°C, for example. It is also highly resistant to moisture. Its oval shape allows ambidextrous use. Its black color contrasts well with the metal ferrule and the rest of the blade. The final look of the knife is clean and timeless. It will appeal to all cooks.

Storage and care :

It comes in a decorated box, in which the knife is wrapped in a beautiful fabric pouch with Koi carp motifs, which create a beautiful Japanese spirit. It's the perfect gift box for a cook! Or to treat yourself!

To best care for your knife, wash it by hand (in warm water, with a non-abrasive sponge), then wipe dry with a soft cloth before storing away from moisture.

A relatively inexpensive knife for a gentle introduction to the "Japanese" style. Although it's not a knife, it has all the hallmarks of an artisanal knife (blackened "kurouchi" blade, hammering). However, the blade is in stainless steel and the handle in micarta, which allows a little more flexibility in terms of maintenance than an authentic "Wa". Apart from being a little heavy, it has everything to please without breaking the bank.
