This 23cm slicing knife allows you to cut beautiful, even slices from whole pieces, such as ham. Its long, narrow blade enables you to cut flesh without damaging it, for fine slices.
The Kai Shun Kamagata Tim Malzer knife is a high-performance, ergonomic knife ideally suited to regular use. It's intuitive to use, making it ideal for professional cooks and passionate amateurs alike.
It enables you to make efficient gestures, for clean, precise cuts. The Kai Shun Kamagata range was created in collaboration with the famous German chef Tim Malzer, and this is not his first encounter with the Japanese manufacturer, since he has already participated in the development of several successful ranges with the brand.
Blade:
The blade is made of satin-finish 1.4116 stainless steel, a popular alloy in the culinary world, thanks in particular to its 14.8% chromium content. To give you an idea, chromium is an essential element in the fight against oxidation.
The alloy's hardness rises to around 57/58 HRC on the Rockwell scale. This is a good ratio between edge life and edge maintenance.
The shape of the blade contributes to the knife's originality. The tip of the blade is curved. Tim Malzer himself came up with this concept, as it was a shape that would make the knife easier to handle (he had observed it on knife models in Japan). In fact, this is where the range takes its name from, Kamagata meaning "sickle-shaped" in Japanese.
The chef's personal signature is directly visible on the cutting surface, marking its authenticity!
The handle:
The knife's handle is made of black POM, a sturdy, lightweight polymer appreciated in the kitchen for its durability. What's more, it's resistant to temperature variations and shocks. Its rounded shape fits perfectly in your palm, whether you're right- or left-handed. Finally, you'll appreciate the logo engraved on the base of the handle: a stylized bull, representative of the collaboration between Tim Malzer and Kai.
The knife can be cleaned by hand, using mild soap and a non-abrasive sponge. You can then wipe it dry with a soft cloth, and store it away from moisture.
The Kai Shun Kamagata knife will win you over with its minimalist, timeless look. It's a great idea to enhance your performance in the kitchen.
