Its blade is made of satin-finish 1.4116 stainless steel, an alloy appreciated in the culinary world for its 14.8% chromium content. Chromium is an essential element in the fight against corrosion.
The alloy's hardness is around 57/58 HRC on the Rockwell scale. This is a very good ratio between edge life and ease of sharpening. You can maintain it with a Sharpening stone to bring out its full cutting potential.
The shape of the blade contributes to the originality of the range. You'll notice that the end of the cutting surface is domed. Tim Malzer himself came up with this concept, as it is a shape that would allow greater manoeuvrability when cutting (he observed it on knife models in Japan). In fact, this is where the series takes its name from, Kamagata meaning "sickle-shaped" in Japanese.
You can also make out the chef's personal signature, directly on the cutting surface, which marks its authenticity.
The knife's handle is made of black POM, a strong, lightweight polymer appreciated for its durability. It is also resistant to temperature variations and impact. The slightly domed shape of the handle sits perfectly in your palm, whether you're a right- or left-handed chef. Last but not least, you'll appreciate the logo engraved on the base of the handle: a stylized bull, the hallmark of Tim Malzer at Kai.
The knife can be cleaned by hand, using mild soap and a non-abrasive sponge. You can then wipe it dry with a soft cloth, and store it away from moisture.
