This 18cmsantoku knife is a versatile model with a Japanese shape (in the style of a chef's knife), appreciated for its maneuverability. It can be used to cut meat and vegetables, but is particularly appreciated for chopping herbs, thanks to its special shape which creates a rocking effect when you handle it.
Blade :
The blade is made of satin-finish 1.4116 stainless steel, a popular alloy in the culinary world, thanks in particular to its 14.8% chromium content. Chromium is an essential element in the fight against oxidation.
The alloy's hardness is around 57/58 HRC on the Rockwell scale. This is a very good ratio between edge life and ease of sharpening. You can maintain it with a Sharpening stone to bring out its full cutting potential.
You can also distinguish the chef's personal signature, directly on the cutting surface, marking its authenticity!
Handle:
The knife's handle is made of black POM, a strong, lightweight polymer appreciated for its durability. What's more, it's resistant to temperature variations and shocks. The slightly domed shape of the handle sits perfectly in your palm, whether you're right- or left-handed. Last but not least, you'll appreciate the logo engraved on the base of the handle: a stylized bull, representative of Tim Malzer at Kai.
Care and maintenance :
The knife can be cleaned by hand, using mild soap and a non-abrasive sponge. It can then be wiped dry with a soft cloth and stored in a dry place.
