Manufacturer KAI enjoys international renown for its kitchen knives and accessories, which are prized by professional chefs and amateur cooks alike. This success is due to the impeccable quality and finish of its knives, which bear witness to the ancestral know-how inherited from blacksmiths (those who created the katanas).
The KAI Shun Nagare series of kitchen knives is currently the very best in terms of performance and design. Let's delve into the technical features of these masterpieces:
The blade of this utility knife is made from 2 types of steel. VG10, a hard steel rich in carbon (approx. 1%) and chromium. It has the strength of a carbon blade, yet remains stainless. The more flexible VG2 completes this structure. This combination forms the Dual Core, a beautiful blend of strength and flexibility, accentuated by the damascus finish.
The blade features a damascus pattern composed of 72 alternating and folded layers of steel, including the core. It achieves around 61HRC on the Rockwell scale. Although harder than a standard blade, it remains easy to sharpen. What's more, the damascus finish is pleasing to the eye and testifies to the manufacturer's expertise. In addition, the blade has a specific patent, the Shun Nagare knife being one of the few to feature a damascus pattern extending right down to the cutting edge. And you can see VG2 and VG10 steels criss-crossing the entire cutting surface.
The handle is made of black pakkawood, a composite material of compressed wood strips and high-pressure resin. It combines the warmth of wood with the strength of resin. As a result, it is more durable, anti-bacterial, moisture-resistant and complies with foodservice hygiene standards. The unusual shape of the handle, with its domed base, allows for a natural, comfortable grip. It is completed by 2 stainless steel rivets that securely fix the blade inside.
