Created according to the principles and needs of German gourmet chef Tim Mälzer, and forged in Japan by experts in the field, the kitchen knives in the Shun Premier Tim Mälzer Kai range are a concentrate of know-how!
This set contains :
- 1 16.5cm all-purpose knife: this long, thin-bladed knife is ideal for slicing and chopping fruit and vegetables, and even meat (boneless).
- 1 20cm chef's knife: this multi-purpose knife is a favorite with chefs. It can chop, mince, chisel...all with precision and on various types of food! It's a kitchen essential.
The blade of Tim Mälzer's Shun Premier knives features a core of VG-MAX steel, one of the finest steels in the VG series. It is based on the VG10 alloy, to which carbon has been added for hardness, and chromium for corrosion resistance. This gives it a hardness index of 61+-1 HRC on the Rockwell scale. This steel also features cobalt, tungsten, molybdenum and vanadium, for a result that is both tough and durable, with a very fine grain that can be precisely sharpened for a long-lasting, high-performance edge. This steel is then surrounded by 32 layers of damascus to protect it and balance the alloy's ratio of hardness to flexibility, keeping the knife rigid but less brittle.
Finally, each blade has been hand-hammered during forging(a technique known as Tsuchime) to give it a more aesthetic appearance and enhance its anti-adherent capacity (the hollows and bumps of the hammering act a little like honeycombs).
In addition, all the knives in this series are inspected by Seki's Japanese master blacksmiths, ensuring that they are perfectly suited to their purpose.
The walnut handle has been crafted to ensure sturdiness and ergonomics, making every use a pleasure! What's more, it's suitable for both right- and left-handed users, which is a considerable advantage. The curved shape sits naturally in the hand, and the engraved steel base adds balance to the knife (and a touch of originality!).
Last but not least, we'd also like to point out the remarkable style of these knives, ensuring authenticity and modernity at the same time, between their wooden handles and impeccably finished blades. Suitable for all cooks. Available in a light-colored wooden box, they make a great gift (or a treat for yourself).
Wash by hand and dry after washing to keep them dry and moisture-free. Do not use the dishwasher.
