Why choose a hinged mold over a conventional mold?

A hinged mold isn't all that different from round or square molds, except for the clamping system built into its rim. This allows you to open the rim and remove the removable bottom. This type of mold is frequently used for the preparation of cheesecakes, mousses and other fragile desserts, which require perfect assembly and delicate demolding.

The use of this mould is comparable to that of a traditional mould, but its main advantage lies in its demoulding, a delicate stage in pastry-making. This operation can be complicated if the pastry has swollen too much, or if the cake sticks to the mould.

The hinged mold effectively solves these problems! Once you've finished baking, place your cake on a trivet and wait for the mold to cool slightly. Then simply loosen the hinge to release the cake easily. The presence of this hinge greatly simplifies unmolding and prevents your cake from breaking.
