Choose Japanese design perfection with this Tamahagane Tsubame slicing knife!
The Tsubame range is a prodigious showcase for Japanese craftsmanship. Did you know that tamahagane is the steel used in Japan to make swords? The sharpness of samurai swords is well known, and the Tamahagane brand continues the tradition with the sharpness of its knives.
The blade of this slicing knife(called Sujihiki in Japan) measures 27cm: this long blade will enable you to slice your raw or cooked red meat, poultry or charcuterie.
The sharpness of this knife will delight you in no time. Made from VG5 steel, the core of the blade has a carbon content of between 0.7% and 0.8%, which is quite high, giving it considerable hardness. To this day , Tamahagane is the only cutlery manufacturer to use this type of steel. Thanks to this level of hardness, the need for sharpening will be felt less often, and cutting quality will remain incomparable. VG5 closely resembles VG10 steel, but is slightly more resistant to corrosion. The HRC hardness is set at 59 on the Rockwell scale, at which level gentle sharpening with a Sharpening stone is required, without waiting for the blade to become dull. This core is wrapped in a softer steel to protect the VG5 and balance flexibility and hardness.
Hammering the blade is both aesthetic and practical! The little hollows are similar to honeycombs: as you cut your meat, you'll notice that it won't stick to the blade, making your task faster and more pleasant.
The knife handle is made of micarta. This material is a blend of resin and paper, making it extremely sturdy and anti-bacterial. Each handle has a different gray-black veining: buying this Tamahagane slicer is your guarantee of owning a unique knife! The knife can be quickly cleaned by hand with a quick swipe of the sponge.
This slicing knife has the strong points that many cooks expect! Fans of Japanese knives will be as enchanted as professionals. You can display your Tamahagane Tsubame knives on a magnetic block to impress your guests!
