Miyabi Japanese kitchen knives are ideal for chefs and home cooks alike. They are powerful and pleasant in the hand, while offering an unparalleled design.
So, in addition to having a knife that lasts and saves you preparation minutes, you have an original high-end piece!
The kitchen knives in the 5000FCD range reflect these latter qualities: you can equip yourself with the best and most affordable Japanese knives.
The blade of this 24cm chef's knife (also called Gyuto in Japanese jargon) features a core of FC61 steel, a very hard steel.
This core is then surrounded by 48 alternating layers of hard and soft steel: the famous damascene process! This allows the blade to be both hard and yet not brittle, since the mild steel brings a little suppleness to the whole. What's more, this alternation creates unique waves of steel on the cutting surface, further enhancing this knife's aesthetic appeal!
The blade is then cooled using the FRIODUR® process, an extreme cooling process that adds hardness to the blade. The result is a knife with an HRC equivalent to 61.
For your information, the chef's knife is the most versatile knife in the kitchen, thanks to its standard shape and size. It can be used to cut meat, fish, vegetables, fruit, etc. You can chop or mince more or less quickly and effortlessly. Beware, however, for novices: a 24cm knife is impressive!
The handle is made of Pakkawood, a blend of high-pressure compressed wood and resin. This material is moisture-resistant and durable over the long term. It also features the special "D" shape of Japanese handles, for greater balance (one side of the handle is round, while the other is sharper).
The steel base adds the final touch of balance to the knife, bringing extra weight to the back of this piece of cutlery.
You can't help but be convinced by this series of kitchen knives!
