The Tamahagane brand is named after the steel used in Japan to make the famous Samurai swords. The reputation of the cutting edge of these swords speaks volumes about the level of sharpness of Tamahagane brand knives. The Tsubame range perfectly showcases Japanese know-how.
The blade of this Sujihiki knife(the name given to slicing knives in Japan) measures 24cm: this rather long blade is indispensable for cutting meat, whether raw or cooked, red or white.
Made from VG5 steel, the core of the blade contains around 0.7% to 0.8% carbon, giving it an extreme hardness of 59 HRC. The sharpness of this knife makes cooking a pleasure (if it's a chore for you, it won't be!). This hardness means you won't need to sharpen the blade as often, as it will wear less quickly than standard steel blades, and the cutting quality is far superior. VG5 and VG10 are very similar in terms of characteristics, but VG5 has the advantage of being more resistant to corrosion. To keep a sharp edge, you'll need a double-sided whetstone, preferably with a 3000/8000 grit, to sharpen the blade in stages. A softer steel covers this hard core to balance hardness and flexibility.
When using this knife, you'll notice that the hammering is not just a decorative touch. In fact, the little hollows act as honeycombs: so when you cut your food, they're less likely to stick to the blade. It's much more pleasant to work with a hammered blade than a smooth one, to gain in speed.
The micarta handle is antibacterial: a mixture of paper and resin, this material is easy to clean, a major asset for professionals working in an environment where bacteria develop rapidly.
