The Wusaki Fujiko 10CrUniversal knife is made in Western China, in the province most renowned for knife and cutting tool production: Guangdong. Manufacturers in this area have enjoyed a fine reputation in this field for decades. It enables you to cut different foods quickly and efficiently. Its medium size makes it easy to handle: larger than a paring knife and not quite as long as a chef's knife. It quickly adapts to your needs: slicing eggplants, lemons, mincing small pieces of meat (without bones)...
Quality materials for long-lasting use
First of all, let's talk about the handle. An emblematic element of the Wusaki Fujiko 10Cr range, it is crafted from beautiful olive wood, the grain of which is unique to each model. Indeed, since wood is a natural material, the knots and shades vary, and that's what makes it so beautiful! In addition to its unique appearance and fruity scent, olive wood is resistant to humidity and, thanks to its density, does not warp easily.
To suit all cooks, it is cut in an oval shape, with a slight convex effect at the base. This makes it easy for both right-handed and left-handed cooks to get to grips with it, and allows them to move naturally when using it.
A superb mosaic rivet has been added to the center of the olive tree, to give it an extra touch of character. Finally, the base is also designed in stainless steel, to further enhance the balance of the piece when in your hand. It is engraved with the Japanese character"Tiger", giving the knife a perfect finish. A stainless steel bolster links the blade to the olive wood handle.
A red border marks both ends of the handle.
The first thing to note about the blade is its damascened construction. A blade with such a structure has a rather rigid core which is then surrounded by a greater or lesser number of layers of another, softer steel. This has a direct impact: the blade will be more balanced. In effect, a hard core provides a more pronounced cutting edge, which holds up better over time, while the outer layers help to adjust this hardness so that the knife is not too brittle in use (because the stiffer a wire, the more sensitive it is to shocks). In fact, it combines the advantages of both alloys.
Fujiko' s Universal knife features a 10Cr15CoMoV stainless steel blade core. With its high carbon content (around 1.05%, whereas the average for Western knives is around 0.5%), it achieves 60 HRC on the Rocwell scale. It will therefore be effective for a long time.
Its chromium content is 15%, chromium being the element that contributes to corrosion resistance. As a result, the knife is said to be stainless (with standard use and maintenance, of course).
To make up the damascus, layers of softer steel have been added on top of the aforementioned core, to balance out its hardness (as previously mentioned). The result is a "softer" knife. Damascus, in addition to its real qualitative contribution in structural terms, also gives the knife a unique style. The superimposition of steels creates waves on the surface of the blade, giving it real character! Each knife has its own damascus finish.
Last but not least, the blade has a mirror-polished finish, which adds to its cachet, while also making it more resistant to corrosion (since polishing flattens the surface of the steel and makes it less porous).
Caring for and storing your kitchen knife
We recommend washing your knife by hand, under lukewarm running water and using a mild soap. You can then wipe the knife dry and store it in a dry place. When washing, avoid getting the handle too wet, as wood does not like to be moistened. From time to time, you can wipe it with a soft cloth soaked in olive oil, to give it a shine and protection. It is imperative not to put your knife in the dishwasher, or let it soak in the sink.
