Make way for Japanese art with this Tamahagane Tsubame sashimi knife!
Japanese craftsmanship is highly sought-after and remarkably well showcased in the Tsubame range. Tamahagane is the steel used to make samurai swords! The razor-sharp edge of these swords is a sure reflection of that of Tamahagane knives!
With its 21cm blade, you can use this sashimi knife to cut extremely thin slices of raw fish to make salmon carpaccios for starters, or sashimi for Japanese food lovers.
The cutting edge of this knife is worthy of a top-of-the-range Japanese knife. The blade is made of VG5 steel. VG5 is similar in many respects to VG10 steel, but VG5 is slightly more resistant to corrosion. The core is covered by 3 layers of softer steel to protect it and balance hardness and flexibility. This hardness means less frequent sharpening and excellent cutting quality.
The small indentations on the blade created by hammering are similar to little honeycombs: as you cut your tuna or salmon, you'll notice that they adhere less to the blade, making your work more pleasant and saving you time.
The knife handle is made of micarta, a blend of resin and paper. This material is strong and anti-bacterial, making the knife much easier to maintain than if it were made of wood, for example. Each handle features a unique gray/black veining: buying a Tamahagane knife is a guarantee of owning a knife that no other cook will possess!
This sashimi knife has the strong points that every cook demands! Professionals will be just as attracted to it as beginners!
