Shimomura TU-9000 knives are made in Japan. Founded in 1874, Shimomura specialized in the manufacture of agricultural tools. From 1957 , they were among the first to enter the new field of stainless steel knives. Their know-how and high-precision processing technology result in efficient blades suitable for both domestic and professional use.
The 16.5cm usuba knife is perfect for cutting vegetables of all sizes. Thanks to its rectangular blade, you can chop nice even pieces. The knife can even be used as a small "scoop" to move chopped food from one container to another. Reminiscent of the Nakiri model!
The blade is made of stainless steel enriched with molybdenum (promotes strength and corrosion resistance) and vanadium (increases strength and shock resistance). The result is a robust blade! The blade thus achieves a hardness of between 56 and 58 HRC on the Rockwell scale. This hardness enables the blade to retain its sharpness for a long time, and to be easily recovered with a Sharpening stone.
To ensure optimum performance from the very first cut, the blade has been sharpened with a Sharpening stone by a qualified craftsman.
As for the handle, it's made from laminated wood, a material that's easy to care for and very light to hold. It ensures good knife ergonomics and is suitable for both right-handed and left-handed users. The handle is complemented by 3 retaining rivets. A stainless steel bolster links the blade to the handle. It adds balance and strength to the knife. Black in color, this knife will complement any kitchen.
We recommend washing the knife by hand under running water with a neutral soap, then wiping it with a soft cloth before storing it in a dry place. It is preferable not to apply too much pressure to the handle under water, as this could cause the wood to warp. Careful maintenance will keep your knife looking as good as new.
This usuba knife is presented in an attractive gilded cardboard box, making it an ideal gift!
