The Wusaki Unagi 16.5cmsantoku knife knife is an all-purpose knife. Its versatility allows you to chop herbs, mince fruit and vegetables, and mince meat and fish.
Wusaki Unagi knives are made by Tsunehisa, a Japanese cutler who has assembled a small team of highly skilled experts. Their know-how is evident in the finishes and materials chosen to create these magnificent pieces.
A unique blade:
It features a core of AUS10 steel, a Japanese steel known for being the strongest in the AUS family. Enriched with carbon (1.05%), its cutting edge is rigid for longer-lasting sharpness. The alloy's hardness of 60 HRC ensures excellent wire durability and easy maintenance. When the need arises, stone sharpening will ensure perfect results!
This alloy is also enriched with nickel, manganese, vanadium and silicon to counterbalance the hardness of the carbon and make the blade less brittle during use. It's an alloy with many qualities, renowned for its resistance to corrosion and wear in general.
The core is then surrounded by several layers of superimposed steels. These layers are enriched with nickel, creating a color contrast between the different layers that helps to distinguish them on the blade. Once again, the alternating layers balance the hardness of the core by adding flexibility to the blade (not pure flexibility, but rather the ability of the steel to better absorb small impacts).
Damascus adds aesthetic appeal to the knife, although it also plays a technical role. As a result, the knife has more character, with a hint of originality due to the unusual damascus shape. In fact, the damascus on Wusaki Unagi knives is shaped like a circle, like a drop of water that has fallen onto the blade before spreading out to create the wave effect.
Finally, for even greater authenticity, the brand logo has been engraved on the cutting surface.
A point about the handle:
Made from oak, this wood is resistant to humidity, shock and vibration, and will not warp easily. In fact, it's a species particularly appreciated in cutlery! The handle is lightly lacquered in black, darkening the natural shade of the oak for added character.
The octagonal shape is perfectly ergonomic. Its 8 sides are suitable for everyone, for ambidextrous use.
The lightweight handle makes it easy to handle, even over long periods of time. You'll be able to cook with this knife for hours on end!
Finally, at the junction of blade and handle, a binder has been injected to prevent food and liquids from entering.
Knife care:
Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve the knife over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.
