Shimomura TU-9000 knives are made in Japan by the Shimomura company. Founded in 1874, the company initially specialized in agricultural tools. In 1957, it became one of the first companies to enter the stainless steel knife industry. They use their know-how and high-precision technology to create knives for both private and professional use.
This 17cmsantoku knife is considered the versatile model with a typically Japanese shape. It is ideal for cutting various foods such as meat, fish, vegetables...
The blade is made of stainless steel enriched with molybdenum and vanadium. The molybdenum enhances strength and corrosion resistance, while the vanadium increases the blade's strength and shock resistance. HRC hardness is therefore 56/58 on the Rockwell scale, ensuring good edge retention while remaining easy to sharpen.
What's more, to guarantee efficiency from the very first use, the blade has been sharpened on a Sharpening stone by a qualified craftsman.
The handle is made of laminated wood, a lightweight, easy-care material that ensures comfort of use and a good grip whether you're right- or left-handed. The laminated wood and steel blade are joined by 3 rivets. The stainless steel bolster is the link between the handle and the blade, providing balance, strength and a final aesthetic finish. Finally, the handle is black: a sober, all-purpose color to match any kitchen!
We recommend washing the knife by hand under running water with a neutral soap, then wiping it with a soft cloth before storing it in a dry place. It's best not to apply too much pressure to the handle under water, as this could cause the wood to warp. Careful maintenance will keep your knife looking as good as new.
This santoku knife comes in an attractive gold-plated cardboard box: ideal for gift-giving!
