A Japanese blacksmith with remarkable skills
This Japanese sujihiki knife features a damascus steel blade, a technique that involves forging a hard steel core, then covering it with several layers of softer steel. This process maintains the right balance between blade hardness and core protection.
The core of the blade is made of VG10 steel, a high-quality Japanese alloy manufactured by the renowned Takefu Special Steel. With a carbon content of around 1%, this steel has a hardness of around 60HRC on the Rockwell scale. This level of hardness guarantees outstanding edge retention, reducing the frequency of sharpening required and delivering efficient cutting performance.
The blade has a fine, solid " flat grind ", which not only reinforces the blade's robustness, but also gives it an elegant aesthetic. What's more, this shape is easy to reproduce when sharpening, simplifying maintenance of the cutting edge.
The core is wrapped in multiple layers of flexible stainless steel to create the damascus effect. Each Takeshi Saji knife features unique patterns resulting from the superimposition of the different steel layers. The blade features a slightly coppery hue, colorful and original! Finally, it features a nashiji finish, characterized by an unpolished surface, adding character and authenticity to this handcrafted Japanese knife.

A damask knife with a rosewood handle
The handle of this damascus knife is made from rosewood, a robust, moisture-resistant species. Its elegant shades of brown add a warm, refined touch to the overall look of your Japanese kitchen knife!
A red pakkawood bolster completes the handle, harmoniously linking blade and wood. This composite material, composed of laminated wood and heat-compressed resin, combines the strength of composite with a natural look thanks to its distinctive grain.
The octagonal shape of the handle adapts perfectly to the hands of cooks, whether left- or right-handed. It guarantees an ergonomic grip, offering optimum comfort, even during prolonged use in the kitchen!
What's more, wood putty has been added to the junction between blade and handle to fill small gaps, preventing the infiltration of water or food residues.
To care for your Takeshi Saji knife, wash it exclusively by hand with a sponge and mild detergent, avoiding wetting the handle. After cleaning, dry immediately and store in a dry place. The dishwasher is not recommended, nor is prolonged soaking in water.
