Description

VG10 Rainbow Nashiji Japanese knives are handcrafted by Japanese blacksmith Takeshi Saji. This craftsman is highly regarded in the cutlery world, a true expert in the field! His handcrafted Japanese knives are prized for their finesse and elegance, and he uses ancestral forging techniques to create original designs that are appreciated by Japanese chefs. Takeshi Saji has been certified as a Traditional Master Craftsman by the Japanese Ministry of Economy since the 90s.

This master blacksmith's workshop is located in the Takefu Cutlery Village, a place where many blacksmiths gather to exchange experiences, materials and know-how. Gathered in the same place, they can continue to perpetuate the tradition that is passed on to apprentices, so that they in turn can pass it on.

The gyuto knife with an original blade

This Japanese chef's knife features a damascened blade: a technique that consists of forging a rigid steel core which is then covered with several layers of softer steel. This process balances the flexibility of your blade while protecting its core.

The core of this blade is made from Japanese VG10 steel, a quality alloy produced by the renowned Takefu Special Steel. It has a high carbon content of around 1%, the key element that increases a blade's hardness. As a result, your Japanese kitchen knife reaches 60HRC on the Rockwell scale: you get excellent edge retention for a high-performance cutting edge! Which is very practical, as you can space out your sharpening sessions.

Your blade's "flat grind" is fine and flat, making it extremely sturdy! More generally, a flat grind is aesthetically pleasing and easy to reproduce when sharpening your cutting edge.

Next, this core is enveloped in several layers of softer stainless steel to create the damascus. You can even see the different steels overlapping to form random patterns that are unique to each piece. The distinctive feature of this damascus is its slightly coppery and colorful hue, which is original! This blade also features a nashiji finish, as it has not been polished, adding character to your handcrafted Japanese knife!

A rosewood handle for this damascus knife

The handle of this damascus knife is made of rosewood, a robust species that is resistant to humidity. This wood reveals elegant shades of brown, making for a warm visual effect.

The handle is complemented by a bolster in red pakka wood, linking the blade to the wood. This composite material is made from laminated wood and resin, all hot-pressed together. It offers you the advantages of composite with a natural result thanks to the veining that appears on it.

With its octagonal shape, this handle is suitable for all cooks' hands, whether left- or right-handed! It provides an ergonomic grip for comfortable use, especially during prolonged cooking.

Finally, wood putty has been added where the blade meets the handle to fill the small gaps. This prevents water or small food items from seeping inside.

To care for your Takeshi Saji knife, it should be washed only by hand with a sponge and mild detergent, avoiding getting the handle wet. Once cleaned, you should dry it immediately to remove all moisture and store it in a dry place. Do not use the dishwasher or leave it to soak in the sink.
