This 31cm butcher's knife with its narrow blade offers optimal cutting quality. In fact, its stainless steel blade has been tempered (i.e. heated and then rapidly cooled), giving it developed flexibility and hardness.
As a result, it will achieve a strength of 55 to 58 HRC on the Rockwell scale. It will also be much better protected against acid attack from foodstuffs and corrosion. In addition, its cutting angle has been laser-controlled, to guarantee excellent sharpness over time.
