The heart of this butcher's cleaver is 10Cr15CoMoV stainless steel, comparable to VG10 steel. This alloy contains a high chromium and carbon content, which enhances its performance. Carbon (1.05%) increases the steel's rigidity, enabling the cutting edge to last longer, reaching a hardness of ±60HRC on the Rockwell scale. Chromium (15.5%) improves corrosion resistance.
