This nakiri knife is perfect for preparing your vegetables! Use it to make a wide variety of cuts in your fruit and vegetables: slices, dices, sticks, you name it! Its large blade makes slicing effortless and remarkably efficient.
Here are a few maintenance tips: wash only by hand with a non-abrasive sponge and mild detergent. Wipe dry immediately after cleaning and store in a dry place. Do not use a dishwasher.
This handcrafted Japanese knife features a damascened blade: a structure made from a rigid steel core that is covered with several layers of softer steel to provide protection, while balancing out its hardness.
Japanese ZA-18 steel, produced by Aichi Steel, is used for the blade's core. The composition of this alloy is similar to that of VG10, with a higher carbon content of 1.2%. This gives it a hardness of 61HRC on the Rockwell scale, so your knife has a long-lasting cutting edge that performs well over the long term.
What's more, this steel has a high chromium content, making it resistant to corrosion. However, this knife remains oxidizable due to its high carbon content, and requires careful maintenance.
Next, the core of the blade is coated with several layers of softer steel to protect it and make it more supple and less brittle. This is how damascus is obtained: random patterns are formed by superimposing layers of steel. Each piece is unique!
The handle of this Yoshihiro knife is made of oak wood, a durable and solid species that is resistant to humidity, shock and vibration. The wood's warm tones give it a warm aesthetic. Here, the handle has been burnt at the end, reinforcing its strength and adding character to your handcrafted knife.
With its octagonal shape, this Japanese kitchen knife is suitable for all cooks, whether left- or right-handed! It offers an ergonomic grip for ease of use, especially during prolonged use.
Finally, wood putty has been added where the blade joins the handle to fill any small gaps. This makes the whole unit watertight and prevents small food items from slipping inside.
Yoshihiro offers efficient kitchen knives that will serve you for many years. The brand's history goes back over a century in Japan. The craftsmen who make these knives are descendants of skilled blacksmiths who created the swords of the warriors of the time (from around the 14ᵉ century onwards). Over time, the forging techniques used to shape these swords have been passed down through the cutlery community, which explains the remarkable sharpness of these knives!
Each knife manufactured by the brand is unique! In fact, here's the manufacturer's motto: 一期一会, which could be translated as "every moment is a once-in-a-lifetime opportunity".
