The Zwilling Kramer Euro Stainless 20cm chef's knife is a must-have for those seeking versatility, strength and precision in a single knife. The result of a collaboration between American knifemaker Bob Kramer and the German company Zwilling, this Japanese knife is hand-forged in Seki, Japan, the historic capital of Japanese cutlery.

With its 20cm blade, it is ideal for all kitchen uses: carving large pieces of meat, slicing bulky vegetables, chopping fresh herbs... Its perfect balance and natural grip make it efficient and pleasant to use every day, even for long or repetitive tasks.

A 20cm blade combining strength and finesse

The heart of the blade is made from MC63 steel, an alloy derived from advanced powder metallurgy. Its carbon content of around 1.25% produces a fine cutting edge that is particularly durable and resistant to wear. Thanks to a CRYODUR® cryogenic treatment, the blade achieves a hardness of 63 HRC on the Rockwell scale, ensuring excellent thermal stability and high resistance to corrosion.

This core is then enveloped in 100 layers of damascus steel (for a total of 101 layers including the core), which protect the core while providing a mechanical balance that limits the risk of cracking. The wavy damascus pattern is not only aesthetically pleasing: it evokes Japanese art and makes each knife unique.

Finally, the edge is finished using the Honbazuke method, in three meticulous stages. Each blade is hand-sharpened to deliver a razor-sharp edge from the very first cut, with a clean, resistance-free insertion into the food.

An elegant, functional Western handle

The 13cm handle follows Western knife standards, with an ergonomic shape and curved heel for prolonged comfort, even with intensive use. It hugs the palm perfectly to provide a secure, natural grip, whatever the cutting style adopted.

Made from black micarta, a composite material of resin-compressed linen, the handle combines moisture resistance, dimensional stability and a grained appearance reminiscent of natural wood. The result is both solid and aesthetically pleasing.

Two stainless steel rivets secure the micarta to the tang of the knife, and a mosaic pin inlaid in the center of the handle marks the collaboration with Bob Kramer, a true seal of authenticity and excellence. This ambidextrous handle is suitable for both right- and left-handed users.

Advice on use and care

To preserve all its qualities, wash the Zwilling chef's knife by hand with a soft sponge and a non-abrasive cleanser. Dry immediately after use to avoid standing moisture. Use a wooden or bamboo board to preserve the cutting edge. Regular maintenance with a fine-grain Japanese stone is recommended. Store in its black case for protection.
