Description

This Miyabi paring knife is a product of Japanese cutlery tradition. Its sharpness and comfort of use will stand the test of time.

The blade is made of top-grade stainless steel with a core enriched with MC63 microcarbides, giving it incredible strength. What's more, its CRYODUR hardening process reinforces the blade's already extreme hardness. In fact, the blade has undergone intense cooling, down to -196°C. As a result, it will achieve a strength of around 63 HRC on the Rockwell scale.

What's more, the damascus blade has benefited from a very special creation process, giving it even greater strength and a totally unique visual appearance. The process consists in creating a steel plate mixing soft and hard steel, which are then welded together. It is this technique that creates the waves on the blade.

The blade also features a typically Japanese profile: it has been designed to offer a 19° cutting edge, perfect for cutting all your foods.

The handle of this knife is also worthy of note: made from birch wood with stainless steel ends, it will ensure your comfort of use. Indeed, birch wood is known to be very light, and the "D" shape of the handle will create a perfect balance of the whole knife. This gives you absolute control over all your cutting operations.

A little jewel of a kitchen these knives..... they don't hide in a drawer, but are on a magnetic support so that I can not only use them quickly, because they are close at hand, but also a pleasure to the eye, Really delighted needless to say (be careful, they are razor blades ....) I bought the whole range and yes luxury has a price I admit it......
