This Guyto knife has a 20cm blade, which you can use to cut all kinds of food (meat, fish, vegetables...). It's the equivalent of a Western chef's knife, a highly versatile knife.
Here are the knife's technical specifications:
-The blade features a powdered core of MC66 steel microcarbides, a steel renowned for its extreme strength.
This core is then surrounded by 132 damascus layers. The damascus process consists of superimposing layers of soft then hard steel, to provide a unique blend of strength and suppleness. The knife adapts to your gestures and cuts. Thanks to this unique process inherited from master blacksmiths, the knife features a drape of waves running along its cutting surface. It becomes even more original!
-The blade has been tempered using the special CRYODUR process. Tempering at -196°C in ice increases its strength and anti-corrosive properties tenfold. As a result, its final hardness is 66 HRC on the Rockwell scale, an exceptional index in the cutlery world (the base is 58 HRC)! As a result, the knife will retain its sharpness much longer than a standard blade, for more frequent sharpening.
Its symmetrical cutting edge (unlike many Japanese knives) means that both right- and left-handers can use it with complete peace of mind.
The handle is made of grit hard maple. Its grain gives it an unmistakable character, and is unique to each knife. It also features the traditional "D" shape for a comfortable grip.
-The base of the knife is made of steel (i.e. the tip), and adds a little extra weight to the overall balance of the piece, contrasting with the blade.
