This Miyabi nakiri knife is made in Japan, a country renowned for the excellence of its cutlery expertise. This nakiri knife is designed in the purest Japanese cutlery tradition, and will give you the pleasure of cooking every day!
The blade measures 17cm and features a core enriched with MC63 microcarbides, making it extremely sturdy! What's more, the CRYODUR technique, which involves cooling the blade to a very low temperature of -196°c, enhances the already high hardness of the steel. As a result, it achieves a hardness of around 63 HRC on the Rockwell scale, compared with 56/58 HRC for a standard blade.
The blade is wrapped in 101 layers of Damascus steel. This process has many advantages: it makes the blade more resistant to corrosion, since damascus is stainless; and it offers an unparalleled look. Damascus is a mixture of soft and hard steel in layers, which are then welded together. It is this technique that creates the highly original waves on the surface.
The blade also features a typically Japanese profile: it has been designed with a 19° cutting edge, perfect for cutting all fruits and vegetables.
The handle of this knife is also top-of-the-range: designed in birch with a stainless steel base, it ensures optimum comfort of use. Birch wood is known for its light weight, and the "D" shape of the handle adapts to the shape of your hand.
Last but not least, the sleek, authentic style of this nakiri will delight all lovers of Japanese knives and beautiful knives. Between the beauty of the damask, the discreet decorations, and the light birch handle topped by a rivet with a mosaic logo, this knife ranks without hesitation at the top of the table of high-end Japanese knives.
