Description

This Miyabi chef' s knife (known as a Gyutoh) is a product of Japanese cutlery tradition. Its sharpness and comfort of use will stand the test of time.

The high-quality stainless steel blade has a strong MC63 microcarbide core, giving it incredible strength! What's more, the CRYODUR hardening process enhances the blade's already extreme hardness. In fact, it has undergone intense cooling down to -196°C. As a result, it will achieve a strength of around 63 HRC on the Rockwell scale.

What's more, the damascus blade has benefited from a special creation process, giving it even greater strength and a highly original visual appearance. The process consists in creating a steel plate mixing soft and hard steel, which are then welded together. It is this technique that creates the waves on the blade.

The blade also features a typically Japanese profile: it has been designed to offer a 19° cutting edge, perfect for cutting all your foods.

The handle of this knife is also noteworthy: made of birch with stainless steel ends, it will ensure undeniable comfort of use. Indeed, birch wood is known to be very light, and the "D" shape of the handle will create a perfect balance of the whole knife. This gives you absolute control for all your cutting!

Finally, the knife's sleek, authentic style will appeal to all lovers of fine blades. Its damascus look, red and gold edging and light birch handle, topped by a rivet with a mosaic logo attesting to the knife's authenticity, make for a highly successful design.

A little jewel in the kitchen, these knives...... they don't hide in a drawer, but are placed on a magnetic support so that I can not only use them quickly, because they're close at hand, but also for the pleasure of my eyes. I'm really delighted, needless to say "careful" because these are razor blades.....I bought the whole range, and yes, luxury comes at a price I admit. Excellent knife, beautifully finished. Top-quality cutting edge and hardness. As for ergonomics after 4 days of use, nothing to say. The knife is well balanced. The only important point to bear in mind, which is not mentioned in the "Learn more" section, is that the birch wood handle is treated to the strict minimum. In fact, to use it, you'll need to have clean, ideally dry, hands beforehand, to avoid marking the wood with foodstuffs containing powerful natural colorants. For this, a master knifemaker recommended a mixture of linseed oil and turpentine, to be renewed regularly to protect the handle. I don't regret my purchase, it's an exceptional blade.
