Why should you choose the Gyuto 24cm knife?
Its blade has a powder core agglomerated with microcarbides of MC66 steel, renowned for its extreme strength.
This core is then surrounded by 132 layers of damascus, i.e. the superposition of layers of soft then hard steel, to provide a unique blend of strength and suppleness.
The knife adapts to your gestures and cuts. Thanks to this unique process inherited from master blacksmiths, the knife features a drape of waves running along its cutting surface. It becomes even more original!
The blade has also been tempered using the special CRYODUR process. Tempered at -196°C in ice, this increases its strength and anti-corrosive properties tenfold. As a result, its final hardness is 66 HRC on the Rockwell scale, which is exceptional in the cutlery world (the base is around 58 HRC). The knife retains its sharp edge much longer than a standard blade, for less regular sharpening.
Its symmetrical cutting edge (unlike many Japanese knives) allows both right- and left-handers to use it with complete peace of mind.
The maple wood handle contrasts perfectly with the cool-toned blade. The grain is unique to each knife, giving it an unmistakable cachet. It also features the traditional "D" shape for a comfortable grip.
-The base of the knife is made of steel (i.e. the tip), and completes the overall balance of the piece, bringing a little extra weight to contrast with the blade.
