The Miyabi 5000FCD bread knife is the perfect compromise between the robustness of European knives and the performance of Japanese knives!
Its 24cm-long serrated blade lets you break through the hard crust of bread and cut into pretty pieces without damaging the bread's appearance. It's also ideal for cutting focaccia, brioche or sandwich bread.
It features a hard core of FC61 steel covered with 48 layers of damascus, giving it a hardness of 61 HRC on the Rockwell scale. This particularly high hardness ensures a long-lasting, sharp cutting edge. The damascus layers also give the knife an elegant appearance and unique patterns.
During manufacture, the blade is treated with the FRIODUR® cooling process, which enhances its flexibility and corrosion resistance.
The knife is suitable for right- and left-handed use, and features a symmetrical 19° angle. Each blade is hand-sharpened using the Japanese "Honbazuke" method, this traditional sharpening process guarantees a razor-sharp edge.
The Miyabi Bread knife features a pakkawood handle. This is a particularly dense material made from a mixture of wood and synthetic resin. The result is a beautiful woody appearance and the lasting strength of resin. The knife handle is less fragile than a wooden handle, and less likely to crack or warp with use.
The D-shaped handle promotes balance throughout the knife. This ergonomic shape provides a comfortable, durable grip.
In terms of design, the Miyabi Bread knife captivates with its perfect finish and authentic visual appearance. From the mosaic inlay on the handle to the red edging on the handle, every detail has been carefully considered. The knife's base is engraved with the brand's kanji.
This Japanese Bread knife can be cleaned by hand, then dried with a dry cloth before being carefully stored.
Let yourself be transported by the Japanese universe with the 5000FCD Miyabi range!
