Description

To obtain perfectly baked breads , it's essential to nibble them before baking. This involves making incisions in the dough with a baker's blade.

Also known as an incisette, this one-piece utensil is made fromcarbon steel*, which is sharper but less resistant to corrosion than stainless steel.

Dough pieces can be nibbled in at least 3 different ways:

- Polka: crossed incisions at an angle to the axis of the loaf (best suited to round loaves)
- Classique: medium-sized incisions almost parallel to the axis of the loaf
- Saucisson: medium-sized incisions at an angle to the bread axis
+ Personalize your nibbling for original breads!

The gesture is possible with 2 inclinations, for 2 different aspects:

- Vertical: for a "homemade" result - neutral aspect
- Beveled (45°): for a professional result - more worked aspect
