Who am I?

My name is Yoshikazu Tanaka and I'm a Japanese master blacksmith. I forge handcrafted knives for several workshops in the city of Sakai. You can find my knives at Hado, Kagekiyo or Sakai Kikumori.

Sakai is recognized as the cradle of cutlery in Japan, having seen the light of day many centuries ago. Originally dedicated to the manufacture of katanas, the famous swords used by the samurai, the town's forges have evolved over time. In the 19th century, Japan was undergoing rapid economic change, and gradually turned to industrialization. Samurai work gradually declined, and by the 1870s, the forges had to turn to blade production.

The forges then specialized in blades for various sectors such as agriculture and cooking, which led to the production of handcrafted knives.

Japanese blacksmiths have been careful to preserve the heritage of katana-making, maintaining the use of the ancestral Honyaki blade technique originally employed for forging swords, for the manufacture of Japanese kitchen knife blades.

I began my apprenticeship several decades ago. I learned the famous ancestral method of forging Honyaki blades, but I'm constantly striving to improve both the process and my skills. Today, I work with my son and an apprentice to pass on my knowledge.

My work

Sakai au JaponOver the years, I've learned many techniques for forging top-of-the-range Japanese knives.

For example, I apply the Yakinamashi process to my blades. This technique involves using straw to heat-treat the blades. This step takes place when I've already pre-shaped the blade: I heat it and then wrap it in straw. The blade then cools slowly, which allows me to control it. The structure of the blade is then more homogeneous. This is how you can enjoy a damascus or san maï Japanese knife with a high degree of hardness.

As a traditional blacksmith, I have been certified Master Traditional Craftsman by the Japanese Ministry of Economy, Trade and Industry. This is true recognition of my work and investment over many decades.

The blade has a core made of Aogami 1 steel with a hardness of 63 HRC. This very hard core is covered by several layers of softer iron, creating a unique and elegant damascus! The blade is protected and perfectly balanced.

It also has a kiritsuke shape that allows it to penetrate food better, making everyday cutting easier!

The magnolia handle is lightweight for intuitive cutting. It has been expertly lacquered, giving it its deep black hue. With its octagonal shape, the handle is suitable for all cooks, right- and left-handed alike!
