The Fukito Olive Damascus 14CR range has been designed to offer knives that are both highly technical and elegant, capable of delivering excellent cutting quality while retaining optimum user comfort. Fukito knives are made in Western China, in the province of Guangdong, a region historically renowned for the production of cutting tools for many decades. The materials and processes used meet the manufacturing standards of French food industry professionals.

This range is distinguished by the use of very high-hardness powdered steel, combined with a damascus structure and olive wood handles, for a controlled balance between performance, durability and aesthetics.

A damascened blade in 14CR powder steel

Fukito Olive Damascus 14CR knives feature damascened blades resting on a core of 14CR powder steel, surrounded by several layers of softer stainless steel. This design balances the blade's mechanical properties, combining core rigidity and wear tolerance on the outer layers, while creating a unique damascened visual.

14CR powder steel is the result of an advanced metallurgy process. Unlike conventional solid steel, it is obtained by grinding metal particles, to which various alloying elements are added. The whole is then compacted using hydraulic presses and sintered by high-temperature heat treatment. This process produces an extremely homogeneous structure, offering greater overall strength and enhanced durability, particularly against the risk of breakage.

The core of this steel has a high carbon content of around 1.4%, well above the European market average. The carbon increases the alloy's rigidity, produces a very fine cutting edge and withstands extensive sharpening to achieve a particularly precise cutting edge. This composition enables a hardness of between 62 and 64 HRC on the Rockwell scale, guaranteeing excellent edge retention over time.

The chromium content, at around 14%, contributes to corrosion resistance, an essential criterion for regular use in the kitchen. Around this high-end core, less rigid layers of stainless steel are added to give the blade extra forgiveness. This combination limits the risk of chipping associated with excessive rigidity, without making the blade flexible.

Vacuum heat treatment for optimum performance

To fully exploit the potential of the alloys used, the blades in the Fukito Olive Damascus 14CR range benefit from vacuum heat treatment. Unlike standard heat treatment, this process takes place in a protected atmosphere, without the presence of oxygen, hydrogen or other elements likely to interact with the metal during tempering.

This treatment preserves the integrity of the alloy components and produces a homogeneously treated blade, optimizing hardness, stability and edge durability.

An olive wood handle with a natural character

The handles of Fukito Olive Damascus 14CR knives are made from olive wood, a species highly appreciated for its warm hues and natural fragrance. Olive wood is renowned for its high density and low porosity, giving it excellent resistance to humidity and limiting the absorption of liquids. These characteristics make it particularly suitable for use in the kitchen, while also being considered naturally antibacterial.

Each handle has a unique grain, as wood is a living material. A stainless steel bolster joins the blade, with a soft, polished edge for a comfortable grip. A triple border in gold and red highlights the transition between wood and steel, reinforcing the knife's refined aesthetic.

A decorative mosaic rivet is integrated into the center of the handle, adding a touch of originality and finish. The handle is completed by a stainless steel base, which contributes to the knife's overall balance and ease of use.

A technical and refined range for the kitchen

The Fukito Olive Damascus 14CR range is designed for chefs looking for high-performance knives with a strong aesthetic identity. The combination of high-hardness powdered steel, a balanced damascus structure and an olive wood handle results in knives that are precise, durable and pleasant to use every day.

Each knife comes in a practical box for storage or gift-giving. To preserve the qualities of the blades and handle, we recommend that knives be washed exclusively by hand with a sponge and mild detergent. After washing, they should be wiped dry immediately and stored in a dry place. Dishwashing and prolonged soaking in the sink are to be avoided in order to preserve the blade and handle over time.
