Description

The Fukito Olive Damascus 14Cr 21cmBread knife has a serrated cutting surface that allows you to easily cut the crust and crumb of your breads, without crushing them. Of course, you can also use it to cut brioches, sandwich loaves, sponge cakes...

This Bread knife is made from some very interesting materials. Let's get into the details!

First of all, it's important to note that the blade is damascened. Damascus is a technical process in which a rigid steel core is surrounded by several layers of "softer" steel, to contrast with the hardness of the other. The end result is a blade that balances rigidity and suppleness (to give you an effective cutting edge but be a little more resistant to breakage). On top of this, damascus adds character to the knife, thanks to the interwoven waves of steel visible on the cutting surface.

To form the heart of its damascus blade, the manufacturer has chosen 14Cr powdered steel. Powdered steel is different from solid steel in that the manufacturing process is more technical. Here, metal particles have to be ground, and other alloying elements added little by little. The final result is more homogeneous than standard steel, making it more durable and resistant to breakage.

Notable features of 14Cr steel include its high carbon content of 1.4%. This increases an alloy's rigidity, so that its edge is stronger and can withstand extensive sharpening (so you can achieve a razor-sharp edge). Carbon also enables the knife to retain its edge for longer, so that sharpening sessions can be spaced out. This particular alloy achieves 62/64 HRC on the Rockwell scale.

The alloy also boasts a high chromium content: 14%, making it more resistant to corrosion.

Once the blade core has been produced, it is surrounded by several layers of less rigid stainless steel, precisely to balance the core, as previously mentioned. This makes the blade softer, without making it flexible.

Finally, the blade is vacuum heat-treated. This process is interesting because, during standard heat treatment, certain elements present in the air can interact with the metal. For example, oxygen, hydrogen...and this can have an impact on the final blade. Here, heat treatment takes place in a protected atmosphere. As a result, the blade can be processed to its full potential.

A stainless steel Bolster forms the link with the handle. It has a soft, polished edge for a pleasant grip when cutting.

The handle is made of olive wood. This type of wood is much appreciated for its fruity fragrance and sunny hue. Note that wood is a living material, so each handle is different, with its own veins.

Olive wood is also reputed to be "immortal", making it particularly suitable for kitchen use. Its density makes it highly resistant. In fact, it has few pores, which means it doesn't absorb liquids and is more resistant to breakage. Finally, it is considered an antibacterial wood, making it far more hygienic than other types of wood.

An elegant gold and red border links the olive wood to the steel of the blade. There's also a superb mosaic rivet in the center of the handle. Its refined pattern adds a touch of originality to the knife. Finally, a steel base finishes off the handle and brings balance to the piece.

It comes in a magnetic box for easy storage or gift-giving.

For perfect knife care, you'll need to wash it by hand and wipe it dry after washing, to remove all traces of moisture. Do not put in the dishwasher or soak in the sink.

Further information: the knife, like all Fukito knives, is carefully crafted in Western China, in the Guangdong province. This location has been associated with cutlery production for decades. The materials and techniques used to create Fukito knives meet the manufacturing standards of French food industry professionals.

Unfortunately, the bevel of the blade is only on one side, so cutting straight is very complicated! The balance of the cutting edge (front and back) needs to be reviewed. 4/10 for the perfect design and handle
Answer: Hello Matthieu, Bread knives are often sharpened on one side only (usually the right side), so we're sorry if this doesn't suit you :/ Don't hesitate to come back to us if you need any advice. Pauline
