Description

The Fukito Olive Damascus 14Cr 17cmnakiri knife is a model whose shape comes straight from Japan. Its wide, rectangular blade cuts vegetables cleanly and precisely. The cutting action is fast and impeccable. What's more, as the blade is wide, you can use it as a small shovel once the pieces have been cut, to gently move them from the board to your container or Frying pan.

Let's talk about its olive wood handle: this species is highly appreciated for its warm color and fruity fragrance. The veins on each knife are unique, as wood is a living material. Olive is said to be "immortal", making it particularly suitable for kitchen use. Its density makes it extremely resistant. In fact, it has few pores, so it doesn't absorb liquids and is more resistant to breakage. Finally, it is considered an antibacterial wood, making it far more hygienic than other types of wood.

A superb mosaic rivet is visible in the center of the handle. Its refined pattern adds a touch of originality to the knife. Finally, a steel base finishes off the handle and brings balance to the piece.

For an impeccable finish, a triple border of red and gold decorates the upper part of the olive tree. A stainless steel bolster links the handle to the blade. It has a soft, polished edge for a pleasant grip when cutting.

The knife's blade is damascened, i.e. it features a hard core enveloped by several layers of "softer" (i.e. less rigid) steel. Damascus not only gives each knife a unique look, but is also attractive in terms of performance and durability.

Here, the knife's steel core is a powder-metallurgy 14Cr (as opposed to solid steel).Powder metallurgy steel is developed using a special know-how: the technical process involves grinding metal particles, gradually adding other alloying elements. The final result is more homogeneous than standard steel, making it more durable and resistant to breakage.

14Cr has a carbon content of around 1.4% (the average for Western knives is around 0.5%). This is a high percentage, which gives the blade a high degree of rigidity. As a result, the cutting edge is more solid and can withstand extensive sharpening to obtain a razor-sharp edge. Carbon also enables the knife to keep its edge over the long term, so that sharpening sessions can be spaced out. This particular alloy achieves 62/64 HRC on the Rockwell scale.

In addition to the carbon, its chromium content is also a plus: up to 14%. The alloy is therefore more resistant to corrosion.

To make the damascus, several layers of less rigid stainless steel surround the core and balance it. This makes it softer, but not more flexible. It's more like a "softness" that prevents breakage too easily.

The blade also benefits from vacuum heat treatment. This process is advantageous because, during standard heat treatment, certain elements present in the air can react with the metal, even during quenching. This is the case, for example, with oxygen, hydrogen... And this can have an impact on the blade. Here, heat treatment takes place in a protected atmosphere, free from all elements. As a result, the blade can be processed to its full potential.

Care instructions: the knife should be washed by hand, using a sponge and mild detergent. Do not put in the dishwasher or soak in the sink. Once clean, wipe dry and store.

Find out more: the knife, like all other Fukito knives, is carefully crafted in Western China, in the Guangdong province. This region has been involved in knife production for decades. The materials and techniques used to create Fukito knives meet the manufacturing standards of French food industry professionals.

It comes in a magnetic box for storage or as a gift.

Very good and beautiful knife

Very effective and very attractive, the big problem is the cardboard packaging and not the foam packaging used on other knives, which is not very sturdy for storage.
the most beautiful of the 3

The nakiri, with its large blade, is particularly beautiful thanks to the damascus and the large number of layers. Together with the damascus handle, this makes for an extremely beautiful knife. Not to mention the razor-sharp edge.
