Fischer manufactures its professional knives in France for butchers, fishmongers and pastry chefs.
This skinning knife is part of the HACCP series, specially designed for professionals. HACCP is a method used to define standards such as ISO 22000 for food safety. Several factors come into play, such as hygiene and the potential chemical and physical hazards of the product. Compliance with the HACCP method means that the knife can be used freely in professional kitchens, as the materials used in its design will have no impact on your health.
You can use this knife to remove sinews from meats, but also to lift fish fillets with ease.
The 20cm blade is flexible for easy filleting. Made from Nitro-B X45CrMoVN15 stainless steel, the cutting edge is durable thanks to the addition of nitrogen to the alloy. Final sharpening is performed by a robot for an ultra-precise edge. Nitrocut steel resists corrosion and impact, and its strength means it can be used intensively without any problems.
The blue handle is made of polypropylene, an antibacterial material that's tough and easy to maintain. The developed guard and anti-slip surface protect your hands from the risk of cuts. It is overmolded, and completed with elastomer for maximum comfort of use.
