The Victorinox fish knife has a 36cm stainless steel blade. The alloy used by the Swiss manufacturer is of exemplary quality, worked to be both corrosion-resistant and slightly elastic (to avoid a brittle blade).
Its long cutting surface is serrated, for fast, clean penetration of fish skin and flesh. You can intensively cut your finest specimens! It is therefore particularly recommended for professional fishmongers whose regular, hard work requires reliable, high-performance knives.
The handle is made from blue Fibrox, a thermoplastic elastomer (TPE) with interesting properties: it withstands temperatures of between 80 and 110°C, is resistant to knocks and has good anti-slip properties. It's comfortable in the hand for both right- and left-handed users.
