This Global G11 "Yanagi Sashimi" fish knife is a multifunctional knife, but only suitable for right-handed use. This is due to the special cutting action, which is only possible when the knife is held with the right hand. The bevelled blade in hardened CROMOVA 18 steel has a hardness of 56 to 58 HRC, ensuring outstanding sharpness even over the long term. What's more, this blade will also be very strong and resistant to corrosion, thanks to its concentration of chromium, molybdenum and vanadium (a composition specially created by GLOBAL).
The blade is bevelled on one side, making it ideal for right-handed use.
The "G" series is designed to ensure perfect balance in the hand, thanks to the one-piece design of its knives. The round, hollow handle ensures this balance. Grip is optimal, and the small holes on the handle improve grip.
To ensure the long life of your Global knife, regular sharpening is essential.
We recommend cleaning your knife by hand with non-chlorinated washing-up liquid and hot water.
