The Japanese Hatsukokoro brand was created a few years ago by a company that had been specializing in cutlery for almost 10 years. For many years, the company has worked with renowned blacksmiths with extensive experience in ancestral forging techniques. It is these craftsmen who forge Hatsukokoro Japanese knives! The brand offers high-quality Japanese kitchen knives for outstanding performance and unique design!
An original blade for this Japanese kitchen knife
This santoku knife features a blade with a damascened structure. This technique consists of forging a rigid steel core which is then surrounded by several layers of softer steel. This process balances the hardness of your blade, while ensuring optimum protection for its core.
In fact, the core of this Hatsukokoro knife is made from Japanese powder-metallurgy SLD steel, produced by the world-renowned steelmaker Hitachi. This alloy contains a high carbon content of around 1.6%, which increases the steel's hardness. As a result, the hardness of your Japanese santoku knife reaches 63HRC on the Rockwell scale, ensuring excellent edge retention and cutting performance.
SLD steel also contains around 12% chromium, an element that increases resistance to corrosion. This steel is therefore a hybrid between stainless and oxidizable steel, but must be carefully maintained to avoid any risk of oxidation!
The micro-structure of SLD steel is also a real advantage! At the microscopic level, its micro-carbides are evenly distributed, making it more resistant to micro-cracks and wear.
The cutting edge of your knife is flat and thin (known as a "flat grind"), which ensures great strength. All in all, flat grinds are very aesthetic and, above all, practical, as they are easy to reproduce when sharpening!
Next, the heart of your Japanese kitchen knife is covered with several layers of softer stainless steel, which add a little suppleness (without making your blade flexible) to minimize the risk of breakage during use. You can see the superimposition of the different steels along the edge of the blade, where fine waves of random patterning are visible. The damascus of this handcrafted Japanese knife is original in that it has a coppery appearance!
Your blade also features a rough forged finish, as it has not been polished. This finish is much appreciated by Japanese chefs for its rustic, traditional feel. It adds character to your damascus knife, as well as a touch of authenticity!
The santoku knife with a sober, elegant handle
This damascus knife features a handle made entirely from ebony, an exotic wood species that is robust and durable. This wood is prized for its dark hue and unique dark veining, making each Hatsukokoro knife truly singular!
The handle is octagonal in shape to suit all cooks, whether left- or right-handed! It offers a comfortable grip for ease of use, especially during prolonged use in the kitchen.
Finally, wood putty has been used where the blade joins the handle to make it watertight. This prevents water or small food items from seeping inside.
To care for your Damascus steel knife, wash only by hand with a sponge and mild detergent, avoiding wetting the handle. Once cleaned, dry immediately with a clean cloth to remove all moisture and store in a dry place. Do not leave to soak in the sink, nor put in the dishwasher.
