Description

The Hatsukokoro brand is renowned for its quality kitchen knives, forged by Japanese craftsmen who have mastered authentic know-how. The Hatsukokoro Ginsou range is designed by a team of cutlery experts, directly in Japan.

The santoku knife is a versatile model, ideal for a wide variety of cuts! It can be used to slice vegetables, mince meat or chop herbs with ease. However, it is not recommended for use on foods that are too hard, such as squash or bones.

A damask knife with a Ginsan heart

This santoku knife features a damascened blade, created by forging a rigid steel core wrapped in several layers of softer steel. This construction offers enhanced protection for your blade's core, while balancing out its hardness to perfection!

The core of this Japanese knife is made of Ginsan steel (also known as G3 or Silver 3), a carbon-rich alloy with a content of around 0.95%. This element increases the steel's hardness, reaching 60HRC on the Rockwell scale. This guarantees excellent edge retention and cutting performance for your Hatsukokoro knife!

Despite its hardness, edge maintenance is easy with a whetstone, allowing you to space out your sharpening sessions!

Ginsan steel also contains a high chromium content, around 14%, making it more resistant to corrosion. However, careful maintenance is essential to prevent any risk of oxidation.

To complete the damascene structure, several layers of softer stainless steel are superimposed around the core. This gives the blade a slight suppleness, increasing its resistance to breakage without making it flexible. Damascus is not only functional, it's also aesthetically remarkable: the superimposition of steels creates fine waves with random patterns, making each Hatsukokoro knife unique!

For an even more refined finish, the blade has been carefully polished, and hand-engraved kanji add a touch of authenticity to this handcrafted Japanese knife.

The Japanese knife with the solid handle

The handle of your damascus knife is made of ebony wood, a species renowned for its strength and durability. Thanks to its high density, this wood effectively resists moisture and warping. Ebony is prized for its dark hue and distinctive veins, making each handle unique.

With its octagonal shape, the handle adapts perfectly to the hands of all cooks, whether left- or right-handed. It guarantees an ergonomic grip, ensuring optimum comfort, even during long cooking sessions!

To ensure a perfect seal at the junction between blade and handle, wood paste has been applied, preventing the infiltration of water or food residues.

To care for your Japanese knife, wash only by hand with a soft sponge, avoiding wetting the handle. After each wash, dry immediately with a clean cloth and store in a dry place. Do not put in the dishwasher or soak in water.
