Choose a versatile Bread knife
This knife is ideal for cutting all types of bread! Its serrated blade lets you cut through the crust without damaging it, and slice the crumb without tearing it. Your bread won't be crushed, and you'll get perfect slices!
The Bread knife is also useful if you need to cut a cake or pie, and even helps you peel large fruits and vegetables such as pumpkins.
Kanetsugu has been in existence for several decades and has therefore acquired considerable expertise in the field of cutlery. Kanetsugu knives are made in Japan, providing you with quality kitchen equipment. The Heptagon Uto range offers attractive prices for renewing your equipment!
This kitchen knife has a structure called San Maï. This is a blade with a hard core that is covered by a softer layer to protect it and achieve optimum balance. We can therefore count 2 different steels superimposed in 3 distinct layers (the top one being split by folding).
The Kanetsugu knife features a core of Japanese VG2 steel, created by renowned steelmaker Takefu. This stainless steel has a carbon content of around 0.7%, giving it ideal rigidity (the average for a good Western knife is around 0.5%). What's more, this steel contains around 14% chromium to make it more resistant to corrosion.
The layer surrounding the core is made of a softer stainless steel to protect it and give it greater flexibility (in the sense that your blade is more resistant to shocks).
You can see the superimposed layers of steel on the bottom of the blade: a fine, randomly patterned wave runs along the edge.
What's more, the surface of the blade is hammered to give it contrast and a touch of originality. Slightly satin-finished, the finish is highly appreciated!
The handle of your Japanese knife is made of pakka wood (known as pakkawood). This is a composition that combines resin and laminated wood by heat-compressing them to join them together. The result is a natural look that could be associated with wood, thanks to the unique grain on each knife. The Bolster is made from the same material in black.
The handle is lightweight for optimum maneuverability! Its ergonomic shape ensures a comfortable grip. It's original and gives its name to the range: it's heptagonal in shape, i.e. with 7 facets. This handle is suitable for both right-handed and left-handed cooks.
To care for your knife, we advise you not to soak it in the sink and to wash it by hand with mild detergents. Dry immediately with a clean cloth and store in a dry place.
