The KAIShun Classic vegetable knife makes efficient cuts!
KAI Shun Classic knives are designed for professional chefs and lovers of high-quality Japanese knives.
The blade of this knife is particularly sharp thanks to the quality of its steel and its 32-layer damascus process. In effect, hard and soft layers of steel are blended to give the blade both hardness and flexibility.
Also, its core is made of VGMAX steel: a special composition concentrated in carbon and cobalt. This material ensures long-lasting strength and particularly high corrosion resistance.
The blade has also been worked and shaped to obtain a convex cutting edge, which is then hand-sharpened for efficient cutting. What's more, it achieves a strength of around 61HRC on the Rockwell scale, so you'll need to sharpen it far less often.
The handle is made of pakka strips, a noble material composed of wood and resin compressed under heat. It is guaranteed to be antibacterial, resistant to temperature variations and water-resistant. In addition, its distinctive "D" shape has been adapted to perfectly fit the shape of your hand, offering you ergonomics and less effort during prolonged use. What's more, it represents the perfect blend of authenticity, with its dark wood, and practicality, with its resin which enhances its hygienic aspect.
Last but not least, we'd like to mention its refined, uncluttered look, with its unique grain pattern. It is inspired by the katanas of the samurai, of which it is a worthy descendant.
As such, this knife is equally suited to professional cooks and private individuals! In fact, it's the perfect blend of craftsmanship, technique and design.
To care for it, we recommend washing it by hand with a soft sponge, then drying it immediately and storing it in a dry place.
